Recipe:Meyer Lemon Pound Cake

Meyer Lemon Pound Cake

2 1/2 c. sugar
1-1/4 c. butter
1 (8 oz.) pkg. cream cheese, softened
2 tsp. meyer lemon zest
2 tbsp. meyer lemon juice
1 tsp. vanilla
1 tsp. lemon extract
1 tsp. orange extract
1/2 tsp. salt
6 eggs
3 c. cake flour
Lemon Glaze
Beat sugar, lemon zest then add butter and cream cheese until fluffy. Beat in lemon juice, vanilla, lemon extract and salt. Add eggs one at a time. Beating after each addition. Add flour, beat until smooth. Spread batter in greased and floured  16x4x4-1/2 deep loaf pan.  Bake at 325°F about 1 hour and 15 minutes or until brown. Cool 10 minutes and remove from pan.
Glaze:
2 c. powdered sugar
2 tsp. grated lemon zest
4 tbsp. meyer lemon juice
Spread Glaze over cake and Enjoy.
